The Drake of Laguna Beach would not be where "Great Food Meets Great Live Music" without its Executive Chef and Partner Paul Gstrein.

His culinary experience began in the Austrian Alps at his family owned and operated hotel and restaurant of 400 years. Chef Gstrein continued his long-standing family tradition while training at Villa Blanco Culinary School in Innsbruck, Austria before moving to the U.S. at age 21.

His culinary prowess landed him at renowned restaurants including Wolfgang Puck's Spago of Beverly Hills, Charlie Trotter's of Chicago, Bradley Ogden's Lark Creek Inn of Marin County, and Mark Peel's Campanile of Los Angeles.

In 1985 Chef Gstrein brought his craft to the original Bistango of Los Angeles and later moved to Orange County to be at the helm of the second one in Irvine. He then launched Bayside in the Promontory Point of Newport beach in 1999 where he earned consistent high marks in the Zagat Guide and major publications.

Chef Gstrein has passed along his unique heritage and expertise to his son and sous-chef, Nick Gstrein, at The Drake. With rich and seasonally evolving flavors, their globally influenced modern Californian menu is served in an array of starters, entrées, and desserts to be enjoyed in our cozy dining room, at the kitchen-side counter, in the piano bar lounge or in the enclosed fire-wall patio.
